Whistler’s dining scene is about to get an exciting addition with the opening of Lorette Brasserie, a restaurant celebrating French and Quebecois culture, later this month.
The restaurant is the latest project from the Paré Restaurant Group, which owns and operates other Whistler landmarks, including Quattro and Caramba. This project in particular is close to the hearts of co-owners Jay Paré and his nephew, James Paré, who named the restaurant in honour of Jay’s mother (James’ grandmother), as well as James’ mother.
Lorette’s kitchen is helmed by Shane Sluchinski, who has a deep background in both French and Quebecois tradition, having spent time watching his French Canadian grandmother prepare dishes from scratch in his kitchen, and a decade on the line at restaurants in his home province of Quebec before moving to Whistler in 2018.
“The food at Lorette evokes a deep sense of nostalgia in me,” said Sluchinski. “It’s the kind of hearty, home-spun cuisine I was raised on. Some of my fondest food memories are of spending time with my grand-mere and sharing in her passion for providing sustenance and comfort through cooking, so I’m excited to pay homage to her and the classic recipes and traditions for which French and French Canadian fare is so beloved.”
The menu includes bites like Onion Tarte Tatin (foie gras torchon, Oka cheese, veal jus), Lobster Vol-au-Vent (sweetbreads, lobster cream), Beef Cheek Bourguignon (champignons, Pemberton carrots, cipollini onion), and Suckling Pig Tourtière (suckling pig, confit duck, grandma’s ketchup, and optional pan-seared foie gras), to name a few.

Lorette Brasserie will also offer a wine list featuring Old and New World varieties from acclaimed vineyards in France alongside local B.C. wines. Additionally, it will feature a focused list of cocktails, including its signature Frozen Vesper (Citadelle Jardin d’Ete, Gey Goose, Lillet blanc, lemon caviar).

When it comes to the front-of-house team, Director of Operations Brad Billick will be leading the charge with his wide range of experience, starting as a server in his hometown of Windsor, Ont., before taking on prominent roles at restaurants and hotel properties in Calgary, Chicago, Boston, and Vancouver.
“From the kitchen to the bar team to the servers, we’ve assembled a talented team that is truly excited to celebrate the quintessential aspects of French and Quebecois cuisine, set a new standard of service and provide unforgettable dining experiences for locals and visitors alike,” said Bilick.

Starting April 26, Lorette Brasserie will be open daily from 5 p.m. to late for dinner. Beginning April 30, the restaurant will be open for breakfast and weekend brunch from 9 a.m. to 1 p.m. as well.
